DICED SWEET POTATOES. Diced sweet potatoes are the backbone of these sweet potato burrito bowls. You can use any variety of sweet potatoes you like, then you’ll toss them with things like…

CUMIN.Then, to play up the Tex-Mex flavors even more, I like to add some cumin. It’s lovely with the chipotle chili powder.

You can easily serve chipotle sweet potato burrito bowls to a group with all kinds of dietary needs or restrictions. Serving someone paleo or doing a Whole30? They can build a bowl with chicken, beef or pork, veggies, guacamole, and cauliflower rice. Vegans and vegetarians can fill their bowls with beans, rice, sweet potatoes, and fresh veggies.

TIPS & TRICKS FOR THE BEST SWEET POTATO BURRITO BOWLS:

ARE THESE SWEET POTATOES SPICY? Everyone has their own spice tolerance, but I’d say these definitely have some kick to them. If you have kids with extra sensitive tastebuds, or don’t tolerate spice well, you may want to decrease the chipotle powder to 1/4 tsp instead of 1/2 tsp. or you can simply use regular chili powder instead.

I DON’T HAVE CHIPOTLE CHILI POWDER. CAN I USE REGULAR CHILI POWDER INSTEAD? You sure can! They won’t be as spicy, but they will definitely taste delicious.

I’VE GOT A MEAT-LOVER IN MY HOUSE. COULD I ADD MEAT TO THESE? Absolutely. Here are the three proteins I’d recommend:

Ingredients

FOR THE CHIPOTLE SWEET POTATOES:

  • 2 large sweet potatoes (about 1.5 lbs.), diced (about 6 cups)
  • 2 Tbsp olive oil
  • 1/2 tsp chili powder
  • 1/81/4 tsp. chipotle chili powder
  • 1/4 tsp cumin
  • 1/41/2 tsp salt (or, to taste)

FOR THE BURRITO BOWLS:

  • Rice (or cauliflower rice)
  • black beans or pinto beans
  • lettuce or honey lime slaw
  • fresh cilantro
  • avocado or guacamole
  • salsa, pico de gallo, or tomatillo ranch dressing

Instructions

FOR THE CHIPOTLE SWEET POTATOES:

  1. Preheat oven to 400 degrees F
  2. In a large bowl, stir together sweet potatoes and olive oil. Sprinkle with chili powder, chipotle chili powder, cumin, and salt and stir to coat.
  3. Spread seasoned sweet potatoes out onto a baking sheet and roast at 400 degrees for 20-25 minutes, stirring every 10 minutes or so.
  4. Serve plain or build into burrito bowls.

FOR THE BURRITO BOWLS:

  1. Spoon rice or cauli rice, roasted sweet potatoes, and beans into a bowl.
  2. Add your favorite toppings–lettuce or slaw, tomatoes, avocado, peppers, corn, etc.
  3. Drizzle or dollop with salsa, guacamole, or tomatillo ranch dressing
